Capt. Paul Jr.'s Fish Cakes
  • 4 medium trout fillets
  • 1 bunch green onions
  • 1 white onion
  • 1 egg
  • 1 cup bread crumbs
  • 1 lemon
  • 1 tsp Tony Chacheres, or season to taste
  • 1/2 tsp pepper
  • 4 tbs olive oil

Squeeze lemon juice over fillets. Cut fillets into 1/8" pieces and
season with Tony's and pepper.
Chop green onions and white onion.
In a large bowl mix fish,green onions, white onion,bread crumbs
and egg until consistent enough to hold together.
Make into patties (about the size of hamburger patties)
Fry in skillet on medium heat on each side for 3-4 minutes or until
it cooks half way through then flip and cook on other side until
done.
Serve with your favorite vegetable.
Feeds 4 people.
FishTale Seviche'

Appetizer
  • 1 Black or Red Drum or 2 Speckled Trout (diced)
           No Frozen fish (Fresh Fish Only)
  • 1 Vidalia Onion (minced)
  • 1 Creole tomato (diced)
  • 2 TBSP Fresh cilantro (minced)
  • 1 Jalapeno (minced)
  • 10 Limes (juiced)

Combine all ingredients and marinate 1 to 2 days.
Serve with corn chips (tostito type)
FishTale Nutty Specs

  • 4 Trout Fillets
  • 1/3 cup flour
  • 2/3 cup ground pecan
  • 2 cups milk
  • salt and pepper to taste
Soak fillets in milk for 1 hr.
Combine flour and ground pecans
Remove fillets from milk and dip in flour and pecan mixture.
Saute on low/medium heat in 2-3 tbsp of olive oil for 2-4 minutes per side
until brown.
Live Bait
  • Keeping  your live bait (shrimp) alive during a full day fishing can be especially tough in the heat. We suggest you keep
    fresh water circulating in your bait well. If the water gets too hot throw a couple of bottles of frozen water in, do not
    use ice as it is freshwater and will kill your bait.
School Fish
  • When fishing birds, approach quietly from a distance upwind if possible using the trolling motor or drift with the wind
    to the school.
Hook Sharpener.
  • Apply epoxy to one side of 5 or 6 paint sticks and place on sheet of 80 grit wet/dry sandpaper &  let dry. Then epoxy
    the other side of the paint sticks and apply full sheet of 100 grit wet/dry sandpaper and let dry. Then cut out sticks
    with a razor knife. Be sure and apply weight to paint sticks while drying.
